This Catimor AA Anaerobic Natural coffee comes from Xishuangbanna, located at the southwestern tip of Yunnan Province.
Anaerobic fermentation is a winemaking technique originally used in red wine production. In recent years, it has become a hot topic in the coffee world, with recent World Barista Championship (WBC) winners even utilizing specially anaerobic-fermented coffee beans.
This Anaerobic Natural coffee is cultivated near the Nandao River. The local estate places high importance on coffee quality, enforcing strict quality control over ripe cherries while refining and improving their processing techniques. With two decades of accumulated experience, the estate not only produces commercial coffee but also grows specialty Yunnan coffee that meets high market demands.
Coffee produced through the anaerobic fermentation process typically features subtle, pleasant winey notes in its flavor profile.
